Birthday Chicken

Yesterday was my birthday, and since I had the day off (no exams! :)) I decided to make dinner for my family and boyfriend. I wanted something that’s easy and delicious (since well, I’m still a beginner cook…) so I made the roast chicken my mom makes sometimes.

Ingredients:


1 chicken, orange marmalade (the bitter kind!)

onions, sweet potatoes and apples

It’s so easy to make! You cut the sweet potatoes and onions into wedges, put the chicken in the pan and place the potatoes and onions around it. Then rub the chicken with some salt and pepper, and spread some on the veggies too.

Put it in the oven (about 210° C) for 40 minutes, then take it out, tilt the chicken to drain the juices and add the apple wedges to the pan. Then put it back into the oven for 15 minutes.

Take the pan out, spread marmalade over everything (I just used a spoon for this, and lots of marmalade! :)) and put it in the oven for 5 more minutes. Done!

So so good! :) Just had the leftovers… mmh
